Les Parcellaires de Saulx is a very small and young negotiant house established in 2017 by major philanthropists and serious wine-loving husband and wife business partners, Mark Nunnery and Denise Dupré. This adds further to their wine portfolio which includes the Champagne house Leclerc Brian in Epernay as well as Domaine de Belleville and Domaine de la Commarriane in Burgundy.
The Les Parcellaires de Saulx winery is located close to the village of Meursault. Jean-luc Vitoux is the Wine Director responsible for all the Burgundy vineyards which include many premier and grand crus bought either as musts or wines. They make various wines both white and red from the Côte d´Or, and their policy is to express single plot wines, sourced from farmers who follow either organic or biodynamic agriculture.
Isabelle Laurand is the cellar master responsible for making more than thirty different cuvées (individual wines) from the Côte de Beaune and Côte de Nuits each year. For most of the wines, only a single barrel of each cuvée is made.

What is a wine negotiant?
A wine negotiant is a company that buys grapes, must, or wines from a grape grower usually through long-term agreements, in order to create wines. In Burgundy, there are approximately four thousand individual domains or growers, the vast majority of which own less than 10 ha most likely spread across many small plots in many different appellations. This means that unless you have sizeable holdings in appellations, it is often better and more economical for grape growers to sell their produce to a negotiant, who then creates special cuvées from grapes, must or wines from other growers in the same local area. There are more than 250 negotiants and 18 co-operatives operating in Burgundy (30,000 hectares).

Red Wines & Burgundy
Some of the best Pinot Noirs come from the northern part of Burgundy in the Côte de Nuits. Here you will find the most famous red wine appellations including Vosne-Romanée, Chambolle-Musigny, Gevrey-Chambertin, Nuits-Saint-Georges and Morey-Saint-Denis. Each of these appellations unique expressions. The wines of Vosné-Romanée, Chambolle-Musigny and Gevrey Chambertin are often described as the most elegant and age-worthy Pinot Noirs in the world.

Smaksnotat:
Pale ruby. On the nose aromatic, creamy, floral, with soft exotic vanilla flowers. On the palate elegant, full-bodied with a fine acid backbone, well-integrated oak, and a lingering finish. Beautifully fresh, with boysenberries and raspberry cream. Fine-grained smooth slightly chalky tannins add some weight to this very youthful yet approachable wine. One to keep!

Its delicate aromas and flavours would work perfectly with veal, or reindeer dishes being careful not to overpower the wine with too many garnishes.
